
Crispy philo shells, ricotta yogurt cream and blackberries.A POST?
After 15 days of work, excluding a sick day, I have had two lovely days off. I figured why not do something nice. I have a roommate who has often spoiled me, so, I wanted to include her for a little afternoon treat! Instant blackberry tarts with a cup of cinnamon coffee.
Instant blackberry tarts! - The shells: I bought mine premade at the store but they're super easy to make in a cupcake pan.
- The cream: half ricotta, half plain yogurt, a few spoonfuls of sugar. blend until smooth.
- The berries: rinse, drain, slice into halves. add a splash of balsamic vinegar and a spoonful of sugar. set aside until vinegar vapors dissipate.
Cinnamon coffee. It doesn't sound like much but I added a few good shakes of ground
cinnamon and a speck of
nutmeg into the coffee grounds of my coffee maker prior to brewing. Oh, it smelled heavenly while it was brewing! My roommate both put tons of sugar and milk in our coffee so it was especially delicious. I put a spoonful of cool whip in mine.
Considering my budget, it was really nice to have a little treat. The blackberries were out of season but I wonder if I can do this with just preserves... Hm..
